Recipe Of The Month - Swedish Nut Cake

For the Cake you will need:
2 cups sugar
2 cups flour
1 ½ tsp. baking soda
1 (No. 2) can crushed un-drained pineapple
3/4 cup chopped pecans or walnuts
2 eggs
1 tsp. vanilla

Combine sugar, flour and baking soda. Add the rest of the ingredients. Stir well, needs no beating. Bake in greased and floured 9 x 13 pan at 350 degrees for 40-45 minutes.

For the Icing you will need:

8 oz. cream cheese
1 box powdered sugar (or 2 cups)
1 stick butter or margarine
1 tsp. vanilla
½ cup chopped nuts
Beat first four ingredients together, spread on cooled cake, then sprinkle the nuts on top.
