Colored rotini pasta (12 oz pkg.)
- Bring water to boil with 2 T olive oil and add pasta. Cook to al dente.
- Add: ½ red onion sliced thinly
- 8 oz can of whole medium black olives
- Broccoli florets
- Cauliflower sliced thinly
- Small summer squash diced
- 8 oz. mozzarella cheese
A pretty summery dish and sooooo good!!!
