Recipe Of The Month: Garlic Cheese Grits

This scrumptious dish was printed in a church cookbook in Plainview Texas in the early 1960’s!

Ingredients:
  • 1 cup quick cooking grits (Quaker - the kind that cooks in 5 min.- not the instant kind)
  • 4 cups of water
  • 1 tsp. salt
  • 1 to 1 1/2 tsp. garlic powder
  • 1 stick of butter-cut into pieces
  • 1  8 oz. package of shredded cheddar cheese
  • 10 drops of Tabasco Sauce
  • 2 eggs + 1 egg white 

Directions:

  1. Place water & salt in pan & bring to boil
  2. Sprinkle grits into boiling water, stirring constantly, then turn heat down & cook, stirring constantly  until mixture is thick (3 to 5 min.) (If there are    any lumps, spoon them out.)
  3. Add garlic powder & butter. Mix. Fold in cheese.
  4. Then add the two eggs & 1 egg white that have been beaten into a “frothy” mixture to the grits
  5. Pour grits into a buttered 8 or 9 in. square pan and back at 250 degrees for an hour until the mixture is set (firm).
  6. This recipe makes about 8 servings. It can be doubled for a bigger crowd. It can also be made, frozen and then popped into the oven and baked when needed!
