Ingredients:
- 1 cup quick cooking grits (Quaker - the kind that cooks in 5 min.- not the instant kind)
- 4 cups of water
- 1 tsp. salt
- 1 to 1 1/2 tsp. garlic powder
- 1 stick of butter-cut into pieces
- 1 8 oz. package of shredded cheddar cheese
- 10 drops of Tabasco Sauce
- 2 eggs + 1 egg white
Directions:
- Place water & salt in pan & bring to boil
- Sprinkle grits into boiling water, stirring constantly, then turn heat down & cook, stirring constantly until mixture is thick (3 to 5 min.) (If there are any lumps, spoon them out.)
- Add garlic powder & butter. Mix. Fold in cheese.
- Then add the two eggs & 1 egg white that have been beaten into a “frothy” mixture to the grits
- Pour grits into a buttered 8 or 9 in. square pan and back at 250 degrees for an hour until the mixture is set (firm).
- This recipe makes about 8 servings. It can be doubled for a bigger crowd. It can also be
made, frozen and then popped into the oven and baked when needed!
